Shrimp Creole
With the long list of ingredients, this looks a lot more complicated than it is. Delicious and nutritious.
Ingredients
- 1 T vegetable oil
- 1 T flour
- 1 medium stalk celery, chopped
- 1 small onion, chopped
- 1 med garlic clove, minced
- 1 medium bell pepper, chopped
- 14.5 oz can diced tomatoes, drained
- 2 T canned tomato paste
- 1/4 c red wine
- 1 c chicken broth
- 1 bay leaf
- 1/8 t smoked hot paprika
- 1/4 t dried basil
- 1/4 t dried oregano
- 1/4 t salt
- 1/4 t black pepper
- 1 lb shrimp, peeled and deveined
- 2 T scallions, minced
- 1 T fresh parsley
- 1 T fresh lemon juiced
- 2 c cooked brown rice
Instructions
- Heat oil in a large skillet. Stir in flour and cook over low heat until mixture is smooth, about 5 minutes. Stir in celery, onion, garlic, and pepper; sautee minutes. Add canned tomatoes, tomato paste, wine, broth, and seasonings. Bring to a boil, reduce heat to low.
- Stir in shrimp and simmer 5 minutes. Stir in scallions, parsley and lemon juice; simmer 1 minute. To serve, spoon 1/2 c of rice into each of 4 bowls and top each with about 2 cups of shrimp mixture.
