Mango Salsa
Serve with a rotisserie chicken for a great no-cook meal on a hot night!
Ingredients
- 2 medium mangoes, finely diced
- 1 medium sweet red pepper, finely diced
- 1/2 medium jalapeno pepper, seeded and minced
- 1 T cilantro, chopped
- 1 & 1/2 T fresh lime juice
- 1/8 t salt
- 1/2 t black pepper
Instructions
- Combine all ingredients in a bowl. Season to taste with salt and pepper.
