Guacamole

Adapted from a classic by Alton Brown.

Ingredients

  • 3 Hass avocados, halved, pitted, and peeled
  • 1 lime, juiced (reserve the juice)
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne
  • 1/2 medium onion, diced
  • 1/2 jalapeño, seeded and minced
  • 2 Roma tomatoes, seeded and diced
  • 1 Tbsp chopped cilantro
  • 1 garlic clove, minced

Directions

  1. Place avocado flesh in a large bowl. Toss with lime juice to coat, then drain and reserve the juice.
  2. Using a potato masher, mash avocados with the salt, cumin, and cayenne to your preferred texture.
  3. Fold in onion, jalapeño, tomatoes, cilantro, and garlic.
  4. Stir in about 1 tablespoon of the reserved lime juice; taste and adjust seasoning.
  5. Let stand at room temperature for ~1 hour to meld flavors. Serve.

Eat with tortilla chips, duh!!
