Green Bean Salad
Everyone loves this!
Ingredients
- 2 large garlic cloves, pressed
- 1 t salt
- 1/4 c olive oil
- 3 T wine vinegar (red or white)
- 1/2 t Dijon style ground mustard
- dash pepper
- 1/2 tsp crumbled thyme
- 1 lb. fresh green beans, snapped
- 6-10 fresh mushroom caps, sliced
- 3 stalks celery, stripped of strings, sliced thin
Instructions
- Put together first 7 ingredients and mix vigorously to emulsify
- Bring water to a boil, toss in beans, boil again, cook for 5 minutes
- Add beans with mushrooms and celery, to dressing
- Let sit at room temp for several hours
Notes Use a vegetable peeler to strip celery of strings or skip this step if you're in a hurry. Follow the directions exactly for cooking the beans--they turn out perfectly.
