Beef Stroganoff
Traditional and Elegant
Ingredients
- 1&1/2 - 2 lbs Sirloin
- salt
- pepper
- 3 T butter
- 1 c fresh mushrooms, sliced
- 1 large onion, chopped
- 2 T flour
- 2 c beef bouillon or broth
- 3 T sherry
- 2 T tomato paste
- 1 t dry mustard
- 1 c sour cream
Instructions
- Cut meat into strips, removing fat. Dust strips with salt and pepper; set aside for 2 hours at room temperature. When ready to prepare, melt 2 T butter in skillet
and sautee mushrooms until tender; remove from pan. In same pan, sautee onions until brown; remove from skillet. Add 1 T butter. When hot, add beef strips; sear, leaving rare. Remove. In remaining butter in skillet
sprinkle flour and blend, browning well (might need to add more butter). Slowly add bouillon,; stir to form smooth gravy. Add sherry, tomato paste and dry mustard and blend well.
Add mushrooms, onions and meat to gravy; mix together and let mixture simmer very slowly on lowest heat for 20 minutes. 5 minutes before serving, add sour cream; blend thoroughly. Serve with rice or noodles.
