  1. Cut meat into strips, removing fat. Dust strips with salt and pepper; set aside for 2 hours at room temperature. When ready to prepare, melt 2 T butter in skillet and sautee mushrooms until tender; remove from pan. In same pan, sautee onions until brown; remove from skillet. Add 1 T butter. When hot, add beef strips; sear, leaving rare. Remove. In remaining butter in skillet sprinkle flour and blend, browning well (might need to add more butter). Slowly add bouillon,; stir to form smooth gravy. Add sherry, tomato paste and dry mustard and blend well. Add mushrooms, onions and meat to gravy; mix together and let mixture simmer very slowly on lowest heat for 20 minutes. 5 minutes before serving, add sour cream; blend thoroughly. Serve with rice or noodles.
