Apple Cake

Mom made this every fall with apples from the Kautz Apple Orchard in Buffalo, Iowa. Dad made apple sauce. The Kautzes donated 25 acres of the farm to Scott County which are now Buffalo Shores Park--complete with beach, playground, and campsites along the Mississippi River.

Ingredients

• Cake
• 1/2 c brown sugar
• 1/2 c white sugar
• 1/2 c shortening
• 1 egg
• 1 & 1/2 c sifted flour
• 1 t baking soda
• 1 t cinnamon
• 1/2 t salt
• 1/3 c cold strong coffee
• 2 c shredded apples
• Topping
• 1/4 c sugar
• 1 t cinnamon

Instructions

1. Combine shortening, sugar, and egg; add apples and coffee; add flour and seasoning. Pour into a 7 1/2 x 11 pan.
2. For topping: mix sugar and cinnamon sprinkle on top.
3. Bake at 350 degrees for 30-40 minutes.
